I didn't purposefully take a picture of this with a nice little slice cut out. . .
I was so hungry, and it looked so good that I just dug in. Then I thought to myself. . . wow, this is really good, I should probably share this recipe! So then I took a picture, and cut myself some more!
8 eggs
½ c milk
1 T of oil
½ chopped onion
½ chopped red pepper
½ c halved cherry tomatoes (if you like 'em - they weren't in this one)
½ t salt, pepper, basil & garlic powder
4 pieces of ham chopped (real chunks would be great, but I just had deli sliced)
2 hash brown patties cut into pieces (this really made it good)
½ to ¾ c cheese
In a frying pan, heat oil over medium heat. Add onions and cook slowly, stirring occasionally, and then add red peppers a bit later. Cook until onions are soft, but peppers are still a bit crunchy. While these two things are cooking. . .
Whisk eggs and milk together in a large bowl. Add the rest of the ingredients and stir until evenly mixed. Spray pie dish with cooking oil, and pour it all into the dish. Cook 25-35 minutes.
Easy right?! This was my first time trying a frittata, and it was so much easier than I thought.
I think I've always been a little nervous to try one, but now it will be added to the rotation. Oh, and this was for dinner, not breakfast! They're versatile!
